Delicious Vanilla Cupcakes with Cookies ‘n’ Cream Frosting

These cupcakes are a fantastic treat to have with a coffee, or a little something sweet after dinner. They’re easy to make, and are sure to be a hit with your family!
Makes 24 med-large cupcakes.

Ingredients:
100g unsalted butter, softened
360g castor sugar
2 egg
2 teaspoon vanilla extract
320g plain flour
4 teaspoons baking powder
320ml milk

leftsidePre-heat the oven to 180°C/350°F/GM4.
Line the cupcake/muffin tray with paper cases.

 

In a bowl, cream together the butter and sugar until light and fluffy, then mix in the egg and vanilla extract.right

Fold in the flour and baking powder, then slowly add the milk, beating as you go until you have a smooth batter.

Spoon the mixture evenly into the cupcake cases; I’ve found that a ¼ cup measure is the perfect amount. Bake for 15–20 minutes until golden.

Transfer to a wire rack to cool.

 

 

 

Frosting
110g Butter
1/4 tsp vanilla
1/4 cup milk

2 cup Icing sugar

Combine butter vanilla and milk. Sift in Icing sugar and and mix until smooth. Combine in 1 packet of Oreo sprinkles. Sprinkle with more oreo pieces, or decorate with mini-oreos on top.
