These cupcakes are a fantastic treat to have with a coffee, or a little something sweet after dinner. They’re easy to make, and are sure to be a hit with your family!
Makes 24 med-large cupcakes.
100g unsalted butter, softened
360g castor sugar
2 teaspoon vanilla extract
320g plain flour
4 teaspoons baking powder
Pre-heat the oven to 180°C/350°F/GM4.
Line the cupcake/muffin tray with paper cases.
Fold in the flour and baking powder, then slowly add the milk, beating as you go until you have a smooth batter.
Spoon the mixture evenly into the cupcake cases; I’ve found that a ¼ cup measure is the perfect amount. Bake for 15–20 minutes until golden.
Transfer to a wire rack to cool.
1/4 tsp vanilla
1/4 cup milk
2 cup Icing sugar
